I have had Aebleskivers in the California Danish town of Solvang and at the Skandi-Fest in Turlock. None compares to these!
- 2 cups Flour, Sifted
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 2 tablespoons Sugar
- 2 cups Buttermilk
- 4 Eggs, Separated
- 2 tablespoons Butter, Melted
- 1/2 teaspoon Vanilla
- Vegatable Oil for Frying
- Powdered Sugar
Sift dry ingredients into medium bowl. Stir in milk, egg yolks and butter. Beat egg whites until stiff and fold gently into batter.
Fry in a danish cake pan, a nut pick or small crochet hook works great for turning. Roll in powdered sugar while still warm and serve with your favorite james or syrup. Traditionally, they are served with Lingonberry syrup or applesauce. Personally, I like good old maple.
