One of my best friends in high school shared this recipe with our home economics class. After 30 years, its still one of my favorites! Easy, inexpensive and good!
- 12 Corn Tortillas
- 1 pound Hamburger
- Salt and Pepper to taste
- 1 Onion, chopped
- 1 4-1/2 ounce can chopped Olives
- 1/2 pound grated Cheddar Cheese
- Salad Oil
- Your favorite Enchilada Sauce
Brown tortillas in oil and pat with paper towels. Brown hamburger with salt and pepper, drain well. Roll hamburger, cheese, olives and onions into tortillas and place in a jelly roll pan. Cover with enchilada sauce.
Bake at 350 degrees until heated through and the sauce bubbles.
