Red Velvet Christmas Cake

From a local Whitehall, Montana cookbook

I found this recipe in an old cookbook, published by a one of the local churches in my hometown. I do not have the cookbook anymore, so I can’t give proper credit. But this is a great chocolate cake that will win friends and well, you know…

Cake

  • 1 ounce Red Food Coloring
  • 3 tablespoons instant Cocoa
  • 1 cup Butter
  • 1-1/2 cups Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 2-1/2 cups sifted Cake Flour
  • 1 cup Buttermilk
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 tablespoon Vinegar

Mix food coloring and cocoa and set aside.

Cream butter, sugar, eggs and vanilla Add cocoa mixture and beat well for ten (10) minutes. Add sifted flour, alternately with buttermilk and salt.

In a separate bowl, mix baking soda and vinegar (it will fizz). Fold into cake batter by hand.

Bake at 350 degrees for 25-30 minutes, or until it passes the wooden toothpick test.

Cool completely on wire racks. Frost (see recipe below).

Frosting

  • 3 tablespoon Flour
  • 1 cup Milk
  • 1 teaspoon Vanilla
  • 1 cup Butter
  • 1 cup Sugar

Cook milk and flour together over medium heat until thickened. Let cool.

Cream butter, sugar and vanilla together. Combine with milk/flour mixture and beat well.
